The Year in Meat


In Eater’s ranking of the eight best new meat dishes in New York City, pork graces the list twice. At Oiji, a Korean restaurant in the East Village, pork is sautéed in gochujang and served with a side of gang-dean-jang.

The second pork feature is the whole pig’s head served General Tso-style at The Cannibal. The pig’s head is slow cooked overnight, crisped in the oven and served family style.
