Breaded Pork Tenderloin Sandwiches are a staple in Iowa and Indiana restaurants.  Originating at Nick’s Kitchen in Huntington, IN, variations of the crispy fried pork loin cutlet can now be found across the Midwest.

The dish is an adaptation of the German-Alsatian schnitzel made with ingredients that are accessible in the Midwest.  There is no correct way to prepare the sandwich – the pork can be coated in batter or breaded before being fried and topped with lettuce, tomato, onion, mustard, mayo, ketchup, or pickles.  Basically anyway it’s prepared it’s delicious.
